Crispy Breaded Herring with Anchovy & Lemon Dressing
This crispy breaded herring recipe is simple, affordable, and full of flavour. It’s made with just a handful of ingredients but delivers a big punch thanks to the rich, bold herring and a buttery anchovy dressing. Serve one herring per person as a starter or two for a light but delicious main. Perfect for an easy weeknight dinner or when you want to impress without the hassle.
You’ll need:
- 2 butterflied herring
- Salt
- Flour (seasoned)
- 1 egg, whisked
- 150g breadcrumbs
- 1 tbsp chopped parsley
- Olive oil
- 75g butter
- Juice of ½ lemon
- 1 tbsp white wine vinegar
- 2 anchovy fillets
- 2 garlic cloves, finely chopped
- Lemon wedge to serve

Season the herring fillets generously with salt. Set up a breading station with seasoned flour, whisked egg, and breadcrumbs mixed with parsley and a pinch of salt. Dredge the fish on the flesh side only, coating first in flour, then egg, and finally the breadcrumbs.
Heat a drizzle of olive oil in a pan over high heat. Place the fish breadcrumb-side down and fry for 2-3 minutes until golden and crispy. Flip and cook skin-side down for just 10-15 seconds to seal. Remove from the pan and set aside.
Lower the heat to a gentle simmer. Add the butter, lemon juice, vinegar, anchovies, and garlic to the pan. Stir until the butter melts and the anchovies dissolve, creating a rich, savoury dressing.
Plate the crispy herring with a peppery green salad and a lemon wedge. Drizzle the warm anchovy butter dressing over the fish. Enjoy!
