You'll need:
- 300g vine tomatoes, halved
- 1 cucumber, cucumber
- 1 red onion, thinly sliced
- 150g black olives
- 200 grams feta cheese, crumbled or cut into small cubes
- 1 garlic clove
- 2tbsp extra virgin olive oil
- 1tbsp dijon mustard
- 1tbsp balsamic vinegar
- 1tsp semi-dried oregano
- Salt and pepper to taste

In a large salad bowl, combine the tomatoes, cucumber, red onion and olives. Season lightly with salt
In a pestle & mortar, add a pinch of flaky salt and 1 garlic clove. Bash into a paste, then add the olive oil, mustard, balsamic vinegar, and semi-dried oregano.
Pour the dressing over the salad and gently toss to combine, ensuring all the ingredients are well-coated. Crumble the feta over the top then serve immediately.
