You'll need:

  • 450g venison mince
  • 1 red onion
  • Olive oil
  • 1 tin red kidney beans, drained and rinsed
  • 1 heaped tbsp smoked paprika
  • 1 tsp cumin
  • 1 tbsp garam masala
  • 1 tbsp oregano
  • 1 tbsp tomato paste
  • 1 tin chopped tomatoes
  • Chicken stock
  • Sour cream, to serve
  • Tortillas, to serve

Finely dice the onion and add it to a pot with a drizzle of olive oil. Fry until soft and translucent, then add the venison mince. Cook until browned all over, then stir in the kidney beans, spices, oregano, and tomato paste. Fry for another 2-3 minutes before pouring in the chopped tomatoes and enough chicken stock to loosen the mixture.

Bring to a boil, then reduce to a gentle simmer. Cover and cook for 2 hours, stirring every half an hour. Remove the lid, turn up the heat slightly, and let it reduce until thick and rich.

Serve with warm tortillas or rice, a dollop of sour cream, and enjoy.
