Ossobuco - a traditional Italian cut from the shins - are a wildly under used cut, given the incredible texture and flavour they hold. Made rich from the luscious River Teign Valley grass, these shins from our Herd of Native Breed Farms make for the most beautiful shin ragu. Cooking low and slow to soak up all the flavors and ladle onto Paccheri pasta.

About the Farm

Will & James Vining

If these names ring a bell, it's because they are the same pioneering wizards behind Pitfield Farm's Suffolk Cross lambs that you may have already gobbled up. With the farm based on the South Devon rolling hills, it seemed only appropriate that we source the native breed of South Devon Cows. As a native breed, they are not the Godzilla sized cows that you'd find on the continent or in the US, but substitute size for flavour. Critically - and similar to the rare breed Dexters from Beardon Farm - they grow up in areas of woodland and rich pasture with a diet so varied that even Tim Spector would be envious. From there, we take his cows just 15 miles down the road to be aged for over a month to build on their naturally flavoursome meat. Just brilliant.

Freezer Life

All of our meat and seafood can be kept in the freezer for at least 6 months, but refer to the best before date on each pack.

Storage & Use

We deliver all our meat frozen ready for you to put straight into the freezer. If any of your meat has thawed slightly during transportation it is completely safe to pop straight into your freezer.

When coming to cook your meat, defrost thoroughly and use within 4 days. Cook your fish within 2 days.

Suitable for oven cooking. Times may vary depending on oven. Ensure meat is thoroughly cooked before serving.
