Arrives frozen (why?)
Mark's Pork Chops are taken off the rib after being aged for 60 days. While aging this long would turn most pork into more of a scratching, the intramuscular fat of these Suffolk Red pigs react so well to time in the ager. Take the rind off these chops and score the skin. Rub tonnes of salt into the grooves and render the fat down at a medium heat with no oil. Then whack up the heat, sear both sides and then baste the fat with the hot oil to get the crunchy bubbly crackling.

Storage & Use
We deliver all our meat frozen ready for you to put straight into the freezer. If any of your meat has thawed slightly during transportation it is completely safe to pop straight into your freezer.
When coming to cook your meat, defrost thoroughly and use within 4 days. Cook your fish within 2 days.
Suitable for oven cooking. Times may vary depending on oven. Ensure meat is thoroughly cooked before serving.
