These are the product of the incredible, incredible effort of Andy Woolmer and his team down in Pembrokeshire. Quite possibly the best story of regeneration, these oysters maintain the same incredible cucumber-y freshness of the rock oyster but with the rounded flavour only experienced in a native; an oyster aficionado's oyster. These require nearly 5 years to reach market size, meaning they have the time to develop more subtle characteristics of the Atlantic Edge. Natives have a crisper bite with a complex umami punch and a distinctive silvery finish. Only available occasionally, and definitely only when there is an “R” in the month. Now shipped direct to you from Andy's site in Pembrokeshire, they'll be as little as 18 hours out the water when they get to you.

Storage, Handling & Preparation Tips:
- Store live oysters in the refrigerator, cupped side up, on a tray or baking sheet lined with a damp towel. This helps to retain the fluid in the shell and keep them alive.
- Do not store in an airtight container or directly on ice, as they need access to oxygen and fresh water can kill them.
- Consume within 48 hours of delivery for the best flavour.
- If an oyster is slightly open, tap it gently; it should close. Discard any oysters that remain open or have broken shells.
- Wash your hands thoroughly with soap and water before handling oysters.
- Use an oyster knife or shucking knife to open the oysters carefully.
- Discard any oysters that smell unpleasant or have a milky liquid.
- Serve promptly. Ideally only shuck oysters shortly before serving.
