Reared in the Hampshire Test and Itchen rivers by the mercurial Pete, these beautiful Rainbow Trout are hand filleted then traditionally hot kiln smoked over oak chippings to produce a deliciously flavoured cooked smoked trout. A more subtle flavour to the more bombastic Smoked Salmon from Ullapool, they are a beautiful complement to your Christmas dishes. Our favourite for a Christmas Eve is the Hot Smoked Trout, Creme Fraiche, Lemon and Dill with Pappardelle.
